Avocado Dressing


Avocado Dressing

Ready in: 10 minutes
Yield: 7 oz (200 g)

1 avocado
2 tablespoons cream cheese
2 tablespoons yogurt 

For the dressing:
2 tablespoons olive oil
1 teaspoon lime juice
1/2 teaspoon red bell pepper powder
1 pinch of salt
1 pinch of ground pepper

1. In a small bowl, combine the olive oil, lime juice and the seasonings. Whisk to blend evenly.

2. Cut the avocado in half. Remove the pit and scoop the flesh into a blender. Add the dressing and process just to blend.

3. Now add the yogurt and cream cheese and process until evenly blended. Taste and adjust the seasoning, if necessary.

4. Scrape the mixture into a glass bowl. Serve as a dressing for salads or use as a dip for raw vegetables.
