Baked Apples with Almond Crust

Yield: 5 servings

5 small apples (Reinette)
lemon zest from 1 lemon
1.8 oz (50 g) erythritol
4.2 oz (100 g) butter
4.9 oz (140 g) ground almonds
1/2 teaspoon ground cinnamon

1. Preheat the oven to 350 °F (180 °C). Wash the lemon under warm water, then pat dry with kitchen paper. Zest the lemon. Wash and peel the apples. Core them with an apple corer.

2. Melt 2.5 oz (70 g) of the butter in a small pan over a low heat. Transfer into a deep plate. Brush the apples all over with the melted butter. Combine the remaining melted butter with the ground cinnamon, erythritol, lemon zest and ground almonds

3. Coat the apples with the almond mixture. Place them on a baking dish and spoon the remaining almond mixture into the opening. Dot with 1 oz (30 g) of butter. Bake in the oven until golden and tender, about 25-30 minutes.

4. Serve with whipped cream to taste. Sprinkle over with ground cinnamon, if you like.
