Easy Oatmeal Cranberry Cookies

Yield: 8 cookies

1 egg
1.4 oz (40 g) butter (softened)
3 1/2 oz (100 g) rolled oats
2.8 oz (80 g) ground almonds
2 tablespoons granulated sugar
1 packet vanilla sugar
4 tablespoons rum
1.8 oz (50 g) white chocolate (pink grapefruit flavour)

1. Preheat the oven to 340 °F (170 °C). Cover a baking rack with baking paper.

2. Roughly chop the chocolate. In a big bowl, whisk the butter with the granulated sugar and vanilla sugar until fluffy. Add the egg and whisk until evenly blended. Add the rolled oats, ground almonds and rum and stir to mix. Fold in the cranberries and chocolate.

3. For each cookie, spoon about 2 tablespoons of the oat mixture onto the baking sheet spacing them a few inches apart. Use your fingertips to form the mixture into round cookies. (Don’t press them too hard.)

4. Bake until golden around the edges, about 15 minutes. Let the cookies cool for 10 minutes.
