Flour-Free Banana Pancakes with Chia
Ready in: 20 minutes
Yield: 7 pancakes
2 (200 g) bananas
8 tablespoons (60 g) ground almonds
1 teaspoon chia seeds
1 pinch of ground cinnamon
3-4 tablespoons vegetable oil
(Optional: You choice of fruit.)
1. Mash the bananas with a fork.
2. In a big bowl, combine the ground almonds, banana, chia seeds, egg and sugar. Stir to blend. Let the mixture stand for 5 minutes.
3. Heat 2-3 tablespoons of sunflower oil in a non-stick frying pan over low-medium heat. (The pan should be covered with the oil.) Per pancake, pour 1 tablespoon of the batter onto the pan and cook until golden brown, about 3-5 minutes on each side. (Carefully flip the pancakes with a spatula, the pancakes break easily.)
4. Drain the pancakes on kitchen paper to remove excess fat. Serve with your choice of fruit. (I choose blackberries. #( ^ o ^ )# ) Sprinkle with confectioners sugar to taste.

♥Personal note: You can add 1 tablespoon sugar/ honey/ or 1 packet of vanilla sugar to the batter, if you like very sweet pancakes. Leave out the cinnamon, if you don’t like the flavour.
