Homemade Beef Patties for Burgers

Yield: 6 burger patties

17.6 (500 g) beef meat
1 onion
2 garlic cloves
0.7 oz (20 g) butter
3 1/2 oz (100 g) bell peppers
2 1/2 oz (70 g) potato
1 egg
1 teaspoon ground chili pepper
1.4 oz (40 g) all-purpose flour
salt
sunflower oil (for frying)

1. Finely chop the garlic and onion. Wash the potato and red bell pepper. Peel and grate the potato. Cut the bell pepper in half, discard the seeds and the white membranes. Then, cut the bell pepper into small cubes.

2. Melt half the butter in a casserole until sizzling. Add the onions, garlic, 1 pinch of salt and chili pepper. Cook over a low heat until softened, about 5 minutes, while stirring occasionally. Stir in the remaining butter, red bell peppers and grated potato. Cover partly, and cook for 5 minutes more, while stirring occasionally. Season lightly with salt, then transfer the mixture into a bowl and leave to cool.

3. Rinse the beef under cold water. Thoroughly pat dry with kitchen paper. With a sharp knife, cut the beef into cubes. Put the beef cubes into a meat grinder and mince them.

4. In a big bowl, combine the potato mixture with the minced beef and egg. Use your hands to mix everything together until just blended. Sift the flour onto a large plate. Shape the meat into burger patties (about 6 pieces) and coat them with flour from all sides, shaking off any excess. Pat them with your hands, shaping more evenly.

5. Heat 2 tablespoons of sunflower oil in a non-stick frying pan over a medium heat. Place half the patties into the hot oil. Cook, partly covered, in batches until set and browned, for 7-8 minutes on each side. Season with salt and pepper. Wipe the greased pan with kitchen paper. Add 2 tablespoons of sunflower oil and cook the remaining patties until set and browned.
