Homemade Oatmeal Cookies

Ready in: 1 1/2 hours
Yield: 25 cookies

5.3 oz (150 g) butter
2.5 oz (70 g) granulated sugar
2 egg yolks
2.8 oz (80 g) all-purpose flour
0.7 oz (20 g) cornstarch
4.2 (120 g) oatmeal flakes
1/2 teaspoon baking soda
1 pinch of salt

  • Koalified Tip:
    The ingredients have to be at room temperature. Take them out of the refrigerater, about 15 minutes before preparing the pastry. The butter has to be soft.

1. In a big bowl, whisk the softened butter with the granulated sugar until creamy. Add the egg yolks, one at a time, whisking well after each addition. (Do not add the egg yolks all at once.)

2. Finely process the oatmeal flakes in a food processor or blender. Sift the flour, cornstarch, salt, oatmeal and baking powder into a separate bowl. Stir to mix evenly.

3. Use your hands to incorporate the flour mixture into the egg mixture. Form the pastry into a roll.

4. Preheat the oven to 350 °F (180 °C). Lay a baking rack with baking paper. Roll out the pastry. Stamp out different shapes with a cookie cutter and place the cookies on the prepared baking rack.

5. Bake in the oven until set and fragrant for about 15 minutes. Let the biscuits cool on a wire rack. The cookies break easily, handle them with care. #( ^ O ^ )#
