Low Carb – Fitness Pizza
A Low Carb – High Protein & Gluten Free Pizza variation
Ready in: 30 minutes
Yield: 8 servings
1.8 oz (50 g) almond flour
4.4 oz (125 g) cheese (montasio)
2 tablespoons cream cheese
6.3 oz (180 g) smoked chicken breast
1 pinch of salt
1 pinch of freshly ground pepper
1 teaspoon of pizza spice mix
1. Finely grate the cheese. In a big bowl, whisk the eggs until frothy. Sift in the almond flour and salt. Add the cream cheese and half the grated cheese. Stir to blend evenly.
2. Preheat the oven to 390 °F (200 °C). Lay a baking tin with baking paper. Pour the mixture onto the baking tin, shaping a rectangle with the thickness of 1 cm / 0.4 in. (The mixture doesn’t have to fit the whole baking tin. ) Bake in the oven until the mixture gets firm, for about 10 minutes.
3. Meanwhile, cut the chicken into cubes. Wash the tomatoes and remove any seeds and stem ends. Cut the tomato flesh into cubes and drain them in a colander.
4. Let the pizza base cool slightly. Top with the chicken and tomato cubes. Sprinkle all over with the remaining cheese. Bake in the oven until the cheese melts, about 6-8 minutes.
♥Personal note: You can add any topping you like. Fresh Bell peppers, chili, olives ect. Don’t add any chicken, if you want to make a vegetarian pizza.
