Overnight Oats with Roasted Nuts and Fresh Fruit

Ready in: 10 minutes // 1 hour resting time
Yield: 1 serving

1 oz (30 g) rolled oats
4 fl. oz (120 ml) milk
1 teaspoon chia seeds
1 tablespoon honey
1 pinch of ground cinnamon

Topping:

(20 g) of nuts (almonds, pecan nuts, pistachios, walnuts ect.)
fresh fruit (apples, bananas, berries, oranges ect.)

1. In a glass bowl, combine the rolled oats and chia seeds. In a separate bowl combine the milk, honey and ground cinnamon. Stir to mix briefly. Pour the milk mixture over the oats and toss them gently. Cover the bowl with plastic foil and refrigeratefor at least 1 hour or overnight. (The mixture will get thicker and the oats will absorb the milk.)

2. Put the nuts in a small non-stick skillet over medium heat. Stir occasionally about 1-2 minutes and cook until fragrant and lightly toasted. Remove the skillet from the heat and let the nuts cool completely. Roughly chop them.

3.Wash, peel and chop your choice of fruit. Before serving, add the fruit and roasted nuts and toss to blend gently.

Personal note: I used these ingredients for the topping: 1/2 banana, (20 g) of walnuts, 1/4 apple, 1/4 tangerine
