Ricotta Dessert with Mixed Berries

Yield: 3 servings

8.8 oz (250 g) ricotta cheese
8.8 oz (250 g) curd cheese (20 % fat)
1 teaspoon chia seeds
1.4 oz (40 g) erythritol
1 teaspoon chia seeds
0.3 oz (1 g) fresh ginger
5.3 oz (150 g) mixed berries
orange zest from 1 orange
0.7 oz (20 g) almond slivers

1. Thoroughly wash the fruit under cold water. Pat them dry with kitchen paper. Finely zest the orange. Peel and finely grate the ginger.

2. Combine the mixed fruit, chia seeds, orange zest, ginger and erythritol in a casserole. Cook the mixture over a low heat, stirring occasionally, until the berries have given off some liquid but still maintain their shape, about 6-8 minutes. Remove the berry mixture from the heat and set aside to cool.

3. Stir together the ricotta cheese and curd cheese in a large bowl. Fold in half the berry mixture and stir until thoroughly blended.

4. Roast the almond slivers in a pan over a medium heat until fragrant and golden for about 2-3 minutes, while stirring occasionally. Transfer onto a plate and leave to cool.

5. Divide the ricotta mixture among dessert glasses. Top with the remaining berry mixture. Sprinkle over with the almond slivers.
