Spicy Avocado Wraps

Yield: 2 servings

2 tortilla wraps
1 (200 g) avocado
2.1 oz (60 g) crème fraîche
1 tomato
1 red chili pepper
1 teaspoon chia seeds
1 lime (juice)
salt

1. Wash the chili pepper and remove the stem end. Cut the chili pepper into small cubes. (For a less spicy flavour, remove the seeds from the chili pepper.) Wash, peel and chop the tomato. While cutting the tomato into cubes, remove the seeds and juice. Squeeze the lime juice into a bowl.

2. Halve the avocado and remove the stone. Scoop the flesh from one avocado half into a food processor or blender. Add half the lime juice and 1 pinch of salt. Process until blended. Add the crème fraîche and process until smooth. Stir in the chia seeds and chili pepper. Cut the remaining avocado half into cubes and drizzle over with the remaining lime juice.

3. Heat a large non-stick frying pan over a medium heat. Add the wrap and cook until just softened, 45-50 seconds on each side. Remove the wrap from the pan onto a wire rack and leave to cool.

4. Once cooled, place one tortilla on a large plate. Spread half the avocado cream down the midde. Arrange half the tomato and avocado cubes on top. Sprinkle over with salt, then roll up to enclose the filling. Repeat with the remaining tortilla.

5. Cut the avocado tortillas in half, if you like. Serve at once.
