Yeast Pastry with Curd Cheese Filling

Yield: 12 pieces

17.6 (500 g) all-purpose flour
0.7 oz (20 g) fresh yeast
8 1/2 oz (250 ml) milk (lukewarm)
3 1/2 oz (100 g) granulated sugar
4.9 oz (140 g) butter (room temperature)
4 egg yolks
1 egg
1 tablespoon rum
1/2 lemon (lemon zest)

Curd Cheese Filling:
1 egg
2 teaspoons custard powder
3 1/2 oz (100 g) granulated sugar
8.8 oz (250 g) curd cheese
3 1/2 oz (100 g) raisins
1/2 lemon (lemon zest)

1. Heat the milk until lukewarm. Wash the lemon under hot water. Then, finely zest the lemon.

2. Dissolve the sugar and fresh yeast in the lukewarm milk.

3. In a separate bowl, beat the butter until fluffly. Add the egg, egg yolks, lemon zest and rum. Whisk to blend evenly. Add the yeast mixture, then sift the flour in batches into the egg mixture.

4. Use your hands to knead the dough until it begins to form a ball. Knead until smooth. If the dough is too sticky, add a little more flour. Form the dough into a ball and leave to rise in a warm place until the dough doubles in volume, for about 1 hour.

5. Lay a baking sheet with baking paper. Turn the dough out onto a lightly floured board and knead it lightly for about 1 minute. Divide the dough into 12 round pieces. Transfer the dough to the prepared baking sheet. Use your hands to stretch them out and make a small well in the centre.

7. For the filling: Wash the raisins and pat them dry with kitchen paper. Sieve the curd cheese through a strainer. In a small bowl, combine the eggs with the sugar and whisk until blended. Sift the custard powder onto the egg mixture and stir to blend. Add the curd cheese, raisins and lemon zest. Toss the mixture to blend.

8. Fill the dough with the curd cheese filling. Then, cover the yeast pastries with a clean and dry kitchen towel and allow them to rise in a warm place until doubled in size, for about 30-40 minutes more.

9. Meanwhile, preheat the oven to 375 °F (190 °C). Bake in the oven until golden brown, for about 25-27 minutes.
