Avocado Sandwich

Avocado Sandwich

Ready in: 10 minutes
Yield: 1 serving (+ avocado spread)

2 slices of toast
1/2 avocado
1 tablespoon cream cheese
1 tomato
1/2 lime (juice)
freshly ground pepper

1. Trim the crusts from the slices of bread. Toast both slices and let them cool on a plate.

2. Wash the tomato and trim the stem end off. Cut the tomato in slices. Halve the avocado and remove the pit with a tablespoon. Peel one half. Set the remaining half in the refrigerator to keep fresh until ready to use. Mash the avocado flesh with a fork. Halve the lime and squeeze the juice from one half over the avocado.

3. Mix the avocado with the cream cheese until well blended. Season with salt and freshly ground pepper.

4. Spread both slices of bread with 1/2 of the avocado cream. Top with the sliced tomato. Press the sandwich lightly together. Cut the sandwich diagonally in half, if desired. Cover and refrigerate the remaining avocado spread until ready to use.

Personal note: Mix finely chopped garlic with the avocado cream, it adds great flavour. ( I’m not a big fan of garlic, that’s why I left it out.) #(^ o ^)# “
I tagged it as “5 ingredients” because well….it is basically made with 5 ingredients, (if you don’t count the salt and pepper). What I’m trying to say is: Everyone should have salt and pepper at home. At any time. 😛
