Baked Potato Patties

Yield: 8 patties

12.3 oz (350 g) potatoes
1 oz (30 g) oat bran
3 1/2 oz (100 g) spelt flakes
5.3 oz (150 g) carrots
1 handful of fresh parsley
1 egg
freshly ground pepper

0.7 oz (20 g) butter

1. Preheat the oven to 340 °F (170 °C). Lightly grease a baking tin with half the butter. Sprinkle all over with semolina, shaking off any excess.

2. Put the oat bran and spelt flakes into a large bowl and pour over with 0.7 fl oz (200 ml) of boiling water.
let the mixture soak for 5 minutes. Thoroughly wash the potatoes, carrots and fresh parsley. Pat dry with kitchen paper. Finely chop the parsley.

3. Peel the potatoes and carrots. Trim the ends, then finely grate the potatoes and carrot. Put the grated vegetables into a colander. Using your hands, squeeze hard to extract most of the liquid.

4. Whisk the egg until frothy. Add the vegetables, parsley and the cooled cereal mixture. Toss to blend evenly. Season with salt and pepper. Shape the potato mixture into patties of the same size. Coat them with flour from all sides, shaking off any excess. Pat them with your hands, shaping more evenly.

5. Place the oatmeal patties onto the prepared baking tin. Bake in the oven until set, about 30 minutes. Turn the patties after about 15 minutes, then dot with the remaining butter.
