Bircher Muesli

Yield: 1 serving

1.4 oz (40 g) rolled oats
2 tablespoons (20 g) raisins
4 fl. oz (125 ml) milk
1 (120 g) apple
0.5 oz (15 g) almonds
Optional Garnishes: Apple slices, ground cinnamon.

1. Wash the raisins. Pat them dry with kitchen paper.

2. Put the rolled oats into a bowl. Pour over with the milk. Allow the mixture to stand or refrigerate for about 5-10 minutes. (The rolled oats will absorb the milk.)

3. Put the almonds in a small non-stick skillet over medium heat. Stir occasionally about 1-2 minutes, until fragrant and lightly toasted. Remove the skillet from the heat and let the almonds cool slighty. Roughly chop the almonds.

4. Peel and roughly grate the apple. (If you intend to eat the muesli later that day, mix the apples with 1 tablespoon of lemon juice, to keep them from getting brown.) Combine the oats mixture with the grated apple, tossing gently. Top with the chopped almonds. Garnish with apple slices and sprinkle over with a pinch of cinnamon to taste.

Personal note: If you prefer a much sweeter muesli, mix the apples with 1 tablespoon of honey. Roasting nuts intesifies their full flavour.
