Caramelized Pears with Rolled Oats

Yield: 3 servings

2 (550 g) pears
1 teaspoon chia seeds
3 1/2 oz (100 g) rolled oats
1.4 oz (40 g) butter
1 tablespoon cane sugar
1 vanilla bean
1 pinch of ground cinnamon
1 lime (juice)

1. Wash, peel, core and dice the pears. Use a paring knife to split the vanilla bean lengthwise, then scrape scrape out the seeds. Wash the lime in hot water, then cut it in half. With your hands, squeeze the juice over the pears.

2. Melt half of the butter in a large non-stick frying pan until sizzling. Add the cane sugar, vanilla and ground cinnamon. Cook for 2 minutes over low heat, stirring often.

3. Add the pears, then bring the mixture to the boil. Lower the heat and cook for 2 minutes more. Often turn the pears to prevent them from getting brown.

4. Carefully remove the pears from the pan and set them aside. Add the remaining butter to the sugar mixture and stir to blend evenly. Melt the butter until sizzling, then add the rolled oats and chia seeds. Cook until golden brown for about 2-3 minutes, stirring often. Transfer to a bowl and allow it to cool completely.

5. Serve the rolled oats with the caramelized pear. Sprinkle over with chopped nuts to taste.
