Cinnamon Oatmeal Pancakes (Low Carb)
Ready in: 15-20 minutes
Yield: 15 pancakes
3 1/2 oz (100 g) oatmeal
1 tablespoon of honey or sugar
10.2 oz (290 g) yogurt (3,5 % fat)
1 pinch of baking powder
1 pinch of salt
sunflower oil (for frying)
Optional:1 pinch of cinnamon
1. In a big bowl, beat the egg until frothy. Add the honey (sugar), yogurt, salt and ground cinnamon. Stir to blend evenly.
2. Sift the oatmeal and baking powder into the yogurt mixture. Stir to blend evenly. Let the mixture stand for 5 minutes.
3. Meanwhile, heat 3-4 tablespoons of sunflower oil in a non-stick frying pan over medium heat. (The pan should be covered with the oil.) Per pancake, pour 1 tablespoon of the batter onto the pan. Cook the pancakes in batches until golden brown, about 1 minute on each side. Carefully flip the pancakes with a spatula.
4. Drain the pancakes on kitchen paper to remove excess fat. Serve with your choice of fruit. Sprinkle with icing sugar to taste.
♥Personal note: If you want to make a low-carb pancakes, replace the honey/sugar with sugar substitutes.
