Healthy Oatmeal Cake – with Apple and Curd Cheese Filling

Yield: 1 cake 

3 1/2 oz (100 g) oatmeal flakes
2.1 oz (60 g) almond flour
1/2 teaspoon baking powder
2.1 oz (60 g) butter
1 pinch of salt
1 tablespoons granulated sugar
1 tablespoon xucker

1. In a large bowl, combine the oatmeal flakes, allmond flour, salt, granulated sugar, xucker and baking powder. Stir to blend evenly. Add the softened butter. Knead until it forms a dough paste.

2. Put 1/2 of the dough base into a baking dish in an even layer. Pat with your fingers to keep them together.

For the apple filling:
lemon juice from 1/2 lemon
1/2 teaspoon ground cinnamon
1 tablespoon honey
1 tablespoon almond flour
0.9 oz (25 g) raisins
16.9 oz (480 g) apples

1. Rinse the raisins under hot water, then pat dry with kitchen paper. Sift the almond flour onto the raisins and mix to coat all over. Wash the lemon under hot water. Squeeze the juice from one lemon half into a bowl. Combine the lemon juice with the ground cinnamon and honey. Stir to mix evenly.

2. Wash, peel, core and dice the apples. Put them into a bowl and sprinkle over with the honey mixture. Add the raisins and toss to mix.

3. Lay the apple mixture in an even layer onto the dough base.

For the curd cheese filling:
13.2 oz (375 g) curd cheese (20 % fat)
1 packet vanilla sugar
1 tablespoon xucker
1 tablespoon cornstarch powder

1. Combine the curd cheese with the vanilla sugar. Sift the cornstarch powder onto the curd cheese and stir to blend evenly. Spoon the curd cheese filling onto the apple mixture in an even layer.

2. Crumble the remaining dough on top of the curd cheese filling.

3. Preheat the oven to 320 °F (160 °C). Bake in the oven until golden brown, for about 45 minutes.
