Heart-Shaped Cookies – Low Carb

Yield: 14 pieces
2.1 oz (60 g) ground almonds
1.4 oz (40 g) baby oatmeal (easily dissolvable)
2 tablespoons chocolate liquereur
1 teaspoon chia seeds
1 teaspoon vanilla bean paste
1 egg yolk
1 pinch of salt
2 tablespoons butter (cold)
1 pinch/1 teaspoon of sugar substitute to taste (stevia, xylitol ect.)
1. In a large bowl, combine the ground almonds, oatmeal, chocolate liquereur, chia seeds, salt, vanilla bean paste and egg yolk. (And sugar substitue, if you are using any.) Knead in the butter. Use your hands to mix everything until evenly blended.
2. Preheat the oven to 325 °F (170 °C). Lay a baking rack with baking paper. Roll out the pastry. Stamp out heart shapes with a cookie cutter. Place the cookies on the prepared baking rack. Bake in the oven for about 10-12 minutes.
3. Once cooled, sprinkle over with confectioners sugar to taste.
