Low Carb Bircher Muesli

Yield: 2 servings

8 1/2 fl. oz (250 ml) milk
0.9 oz (25 g) almond flour
1 (80 g) apple
1 pinch of ground cinnamon
0.7 oz (20 g) rolled oats
1/2 oz (15 g) sunflower seed mix
9 almonds
lemon juice from 1/2 lemon

1. Wash and halve the lemon. Squeeze the juice from one half into a small bowl.

2. Per serving, sift half the almond flour into a bowl. Pour over with half the milk and stir to blend evenly. Add 1 pinch of ground cinnamon and half the rolled oats and stir briefly to blend. Allow the mixture to stand or refrigerate for 10-15 minutes. (The rolled oats will absorb the milk.)

3. Put the almonds and sunflower seed mix in a small non-stick skillet over medium heat. Stir occasionally about 1-2 minutes, until fragrant and lightly toasted. Remove the skillet from the heat and let the nuts cool completely. Roughly chop the almonds. (Roasting nuts intesifies their full flavour.)

4. Wash, peel and grate the apple. Drizzle over with the lemon juice to prevent dicolouring. Combine the oats mixture with the grated apple. Top with the roasted nuts. Garnish with apple slices and sprinkle over with a pinch of cinnamon to taste.

Personal note: If you prefer a sweeter muesli, add 1 tablespoon of erythritol to the milk mixture.
