Oat Flakes Cake with Dried Fruit

Yield: 10 servings

7 oz (200 g) cottage cheese
5.3 oz (150 g) oat flakes
1 oz (30 g) ground almonds
1 egg
3.4 fl. oz (100 ml) milk
3.5 oz (100 g) cream cheese (low fat)
3.5 oz (100 g) erythritol
1 oz (30 g) raisins
1 oz (30 g) dates
1 oz (30 g) cranberries
butter (for greasing the baking dish)

1. Preheat the oven to 340 °F (170 °C). Lightly grease a baking dish with butter. Roughly chop the dates.

2. In a large bowl, whisk the egg until foamy. Press the cottage cheese through a strainer. Add the remaining ingredients in batches and stir until evenly blended.

3. Pour the cereal mixture into the prepared baking tin, spreading it evenly. Bake in the oven until set, about 38-40 minutes. Let the oat flakes cake cool for 20 minutes before serving. Serve with your choice of fruit.
