Star Anise Yeast Buns

Yield: 16 buns

17.6 oz (500 g) all-purpose flour
0.9 oz (21 g) fresh yeast
6.8 fl. oz (200 ml) milk
2.1 oz (60 g) granulated sugar
4.4 oz (125 g) butter
2 eggs
1 oz (30 g) candied lemon peel
0.9 oz (25 g) candied orange peel
0.9 oz (25 g) raisins
1/2 teaspoon salt
1/2 teaspoon ground star anise
lemon zest from 1/2 lemon

1 egg yolk, 1 tablespoon milk

1. Sift the flour into a large bowl and make a well in the centre. Heat the milk until lukewarm. Rinse the raisins under warm water, drain them, then thoroughly pat dry with kitchen paper.

2. Crumble the fresh yeast into the well. Sprinkle over with half the granulated sugar. Pour in the warm milk and stir with 1/4 of the flour. Sprinkle the yeast mixture lightly with flour. Cover the bowl and let the yeast mixture stand for 15 minutes. (You will see some cracks in the flour after a while.)

3. Melt the butter in a small skillet over a low heat. In a small bowl, stir the eggs until blended.

4. Pour the eggs and melted butter (lukewarm) into the well. Sprinkle over with the remaining sugar. Use your hands to knead the dough until it begins to form a ball. Knead until smooth. If the dough is too sticky, add a little more flour. Form into a ball. Incorporate the candied lemon peel, lemon zest, salt, candied orange peel, ground star anise and raisins into the dough. Cover and leave to rise in a warm place until the dough doubles in volume, about 30 minutes.

5. Grease a clean baking sheet with butter. Knead the yeast dough lightly for about 1 minute. Divide the dough into 16 pieces of the same size and place them on the prepared baking sheet. Stir together the egg yolk and milk in a small bowl. Brush the dough pieces with the egg mixture. Cover and leave to rise until doubled in size, about 30 minutes.

6. Meanwhile, preheat the oven to 350 °F (180 °C). Bake until golden brown, about 22-25 minutes. Do not open the stove while baking the yeast dough.
