Toasted Oat Flakes with Quark

Yield: 1 serving

0.7 oz (20 g) oat flakes
0.4 oz (10 g) butter
1 teaspoon cocoa powder
0.4 oz (10 g) cranberries
3 1/2 oz (100 g) quark (low fat)
1 oz (30 g) banana
1 teaspoon lemon juice
1 teaspoon honey

1. Heat the butter in a non-stick frying pan over a low heat. Stir in the cocoa powder and cranberries. Toast the oat flakes mixture for about 2 minutes, while stirring often. Transfer onto a plate and leave to cool. Drizzle over with the honey.

2. Slice the banana and drizzle all over with lemon juice. Arrange half the banana slices onto a serving glas. Top with 1/2 the oat flakes mixture. Spoon the quark evenly on top. Arrange the remaining oat mixture on top. Sprinkle over with grated coconut to taste.
